Motuleño-Style Eggs

Ingredients
- 2 tomato
- 1/2 onion
- 3 slices of ham
- Salt
- 1 male plantain
- 3 tortillas
- 1 habanero pepper (optional)
- 1 can of peas
- Refried black beans
- 2 Eggs
- Oil or butter
Steps
- 1. Chop and cook18 min
On a cutting board, dice the tomato, onion, and ham. Then, in a skillet with oil, add the chopped vegetables and ham; cook for about 10 to 15 minutes, until the tomato releases all its juices.
- 2. Cut plantain2 min
Cut your plantain crosswise, as shown in the video at the 00:56 mark, and fry it in plenty of oil or lard until it is golden brown.
- 3. Fry your tortilla5 min
After frying and removing your plantain, fry your tortilla until it's crispy.
- 4. Sauce5 min
Your sauce consists of the tomatoes, onion, and ham you’ve already cooked; you’ll just add a habanero pepper along with all their juices (optional). Stir gently just to infuse the flavor—be careful, because if the habanero bursts, your sauce will be very spicy. Finally, add your drained peas, cook for about 5 more minutes, and you’re done.
- 5. Fried Egg3 min
Add oil or butter to your skillet—whichever you prefer—then crack the egg into it and cook it, but make sure the yolk doesn't cook all the way through; it should remain soft.
- 6. Prepare the dish5 min
Take your tostadas and spread a tablespoon of beans (optional if you don’t like beans) on top of them for your fried eggs, then place the third tostada on top of the eggs as shown at the 02:21 mark. Top it with the sauce you made, and place the plantains on the sides. That’s it—your dish is ready. Enjoy!
