Potato pancakes stuffed with ham and cheese

Ingredients
- 4 medium potatoes
- 5 slices of your favorite ham
- 3 eggs
- 1 cup wheat flour
- Vegetable oil for frying
- 2 semi-round plates
- 1 large skillet
- 4 Paper towels
- 1/2 cup grated fresh cheese (Oaxaca or mozzarella)
Steps
- 1. Prepare the potatoes25 min
First, peel the potatoes and place them in a pot with enough water and about half a tablespoon of salt. Let them cook for about 20 minutes. Tip: To check if they’re done, pierce each potato with a fork; if the fork goes in and out easily, they’re ready.
- 2. Let it rest5 min
Remove the potatoes from the water with tongs and let them rest.
- 3. Grind the potatoes5 min
In a large bowl, mash the potatoes with a potato masher. Add the diced ham and cheese to the bowl and mix until the ham is well incorporated.
- 4. Beat the eggs3 min
In a moderately deep bowl, add 3 egg yolks and 1 egg white, then beat well with a mixer or fork until a frothy consistency forms. Next, place the flour in a similar bowl.
- 5. Make the pancakes6 min
Take about one and a half fistfuls of the potato, ham, and cheese mixture, shape it into an oval by rolling it into a ball and flattening it slightly. Now, take a large skillet with plenty of oil and heat it over medium heat. Then, coat the patties thoroughly in flour. Next, dip them in the beaten egg mixture.
- 6. Fry the pancakes4 min
Next, using tongs, fry them in very hot oil, taking the necessary precautions, and cook them for about 3 minutes on each side so they are thoroughly cooked.
- 7. Remove the pancakes3 min
Now we’ll carefully remove them from the skillet and place them on paper towels to remove the excess oil.
